What You’ll Need For Pineapple Casserole

  • Pineapple: Use both canned crushed pineapple and pineapple chunks in this recipe. Drain the pineapple well, as it will release juice as it bakes.
  • Cheese: Use cheddar cheese in this recipe, I prefer sharp cheddar for a bolder flavor. Pre-shredded cheese works just fine in this recipe.
  • Topping: Ritz crackers add a buttery crunch to this recipe—other types of crackers can be used.

Variations

  • Stir in ½ cup of softened cream cheese in Step 2 for an extra creamy casserole.
  • Step 4. Feel free to use your favorite sugar substitute or gluten-free flour blend!

How to Make Pineapple Casserole

  1. Mix: Combine pineapple, cheese, flour, and sugar in a bowl and transfer to a casserole dish.
  2. Make topping: Mix butter and crushed crackers together and sprinkle over the pineapple mixture.
  3. Bake: Bake (recipe below) and serve warm.

Leftovers, Storage, and Freezing

Keep leftover pineapple casserole in an airtight container in the refrigerator for up to 4 days, and enjoy it cold or heat in the microwave if desired.

Freeze in a freezer-safe container for up to two months; however, the crackers will be soggy. Feel free to add fresh crackers to the top and pop it under the broiler until the cracker crumbs are crispy and golden brown.

This casserole is a salty-sweet side dish that’s popular in the South and always a hit at potlucks.

  • Preheat oven to 350°F.

  • In a large bowl, combine the pineapple, cheese, sugar, and flour. Transfer the mixture to a 2 QT baking dish.

  • In a medium bowl, mix the melted butter and crushed crackers until evenly coated.

  • Sprinkle the crackers over the top of the pineapple mixture and bake for 30 minutes. Serve warm.

  • For a larger crowd, double the recipe and bake in a 9×13-inch pan.
  • Granulated sugar may be used instead of light brown sugar.
  • Other butter crackers may be used instead of Ritz, you should have about 1 1/2 to 2 cups of crushed crackers.
